LiC SCIENCE UPDATE

What’s happening here? 

So, this is a continuation of a globalisation trend which you can see in a number of sectors.  Essentially, its a reminder that flavour profile, in place of geography, is becoming more important to consumers, particularlly millenials.  Its not restricted to breakfast, you can witness this ‘new-fusion’ in restaurants right across the US and UK.


But at present you’ll find it at both the low and high end (hipster and michelin). Noticeably there’s nothing yet in the middle ground (casual dining). In the US fusion is everywhere in trucks and fast casual, and its of interest because thats the mass-market entry point.  Here in the UK our entry point is still pubs. Once you begin to see fusion crossover into leading pubs and small groups, adoption into the mass market is likely to be quick.

LANTANA, FITZROVIA

Trendy Australian cafe.. BARF!

Its not trendy, don’t bother with the web reviews. its just good. Lantana started dishing out the Aussie fayre long before snyone realised it was cool. And they’re still rocking out the fritters.

GRANGER & CO, WESTBOURNE GROVE

2 restaurants in Sydney, 1 in Japan, and now 2 in London.  And a few books, something about some TV. You’re not sure you’ll like Bill, then you meet him, and he’s the nicest man in the world damn it.  And then you have the eggs.. and life takes on a higher meaning.

KOPAPPA, SEVEN DIALS

Peter Gordon’s cool, fact.. no discussion to be had.

Hot on the heels of Providores, Marylebone comes another PG interpretation rich in fusion and deliciousness. Turkish eggs snuggle up against ricotta fritters and a chorizo muffin.  Kyle runs the show and we love Kyle (NZ) mainly because he worked for us before this.. name check him at the door for the best seat in the house and tell him Mike said it was cool!


WORKSHOP, CLERKENWELL

Workshop began life as St Ali, sister to the famous Melbourne cafe. And then suddenly it was called Workshop and nobody was allowed to talk abut St Ali anymore. We’ve all had those tricky relationships. Amazing coffee, all-day menu and a coffee geek outpost in Marylebone where specific gravity is discussed with the adoring and slightly confused customers. Love it for the living-wall alone.§

SALVATION JANE, OLD STREET

The second outpost for the Lantana gang is a stones throw from Silicon Roundabout and is a roomier outpost which trades through until late. Mushrooms and polenta feature alongside the de-rigeur ricotta french tosat and already classic brunch dishes.

CARAVAN, KX

Nailed it.  Great location in the heart of the new KX, all-day occasion and a guest-mix to die for. The roastery is serious and at the heart of the business, someone who knows food has put the menu together which roll’s easily between day-parts.  And its big!  Find the less glamouress first outpost in Exmouth mkt.

THE MODERN PANTRY, CLERKENWELL

Anna Hansons gaff.  Super new-fusion grub, well thought out menu where flavour-matches take centre stage.. malay-style pancakes rest easy alongside chorizo and plantain fritters and boiled eggs w marmite soldiers. You think its going to kill your wallet but like the vibe its pretty accessible.

LONG WHITE CLOUD, HAGGERSTON

Nervous hipsters eye the joint suspiciously.. there’s a meaty fritatta alongside a fritter stack.. wtf!?

LUCKY BEACH, BRIGHTON

Brioche french toast w salted caramel and banana, hazelnut milk, duck eggs, gochujang korean chilli sauce, organic eggs, caramelised bacon.. but as yet not a fritter in sight. Wont be long. And all that on the beach slap bang in the heart of kiss-me-quick country?!

HOI POLLOI, SHOREDITCH

No more on-messageness is possible.  Cold press juice outside, Speakeasy-type entrance through the florists, or sneak through the Ace Hotel for more credibility a menu representing a marriage between fennel; and ricotta, and not an Aussie in sight!  Beautifully designed room. 

We realise that you were probably still considering ‘English Breakfast’ to be the reason behind our permanent membership of the United Nations security council.  A proud moment,a world standard.. our birthright.  But we’re going to interrupt that for breaking news from inner London. Terrible news.

There’s a new breakfast in town.. and its Australian!!!

BILL GRANGER IS

News came to Lostincatering last week that TV’s Bill Granger had secured a licence for his second Granger & Co site, a 98 seater in Clerkenwell on the back of his quiet but massive success in Westbourne Grove.  And Bill’s not alone. This time the Australasians are using coffee as the trojan horse (RIP The Church, KX), and we all remember where that ended.


We’re seeing an increasing number of Kiwi and Aussie inspired operators dolloping flavoured mascarpone onto banana bread, sweetcorn fritters are replacing bubble and squeak, grilled tomato is being upgraded to kasundi, miso chestnut mushrooms and avocado are being squished onto organic sourdough, organic eggs are poached.. you’d better NOT ask for fried. 


Its disturbing, its wrong, its..  delicious!
